Deep Fried Onion Rings

6 medium sweet onions (Vidalia)
1 beaten egg
1 cup milk
3 tbsp. cooking oil
1 cup plus 2 tbsp. all-purpose flour
1/2 tsp. salt

Combine egg, milk, and oil. Blend in flour and salt til moist. Heat 1/2 to 1 inch oil in skillet to 375 degrees. Using fork, dip onion rings into batter to cover. Drip excess batter back into bowl. Fry in oil 2 or 3 minutes until brown. Turn over once and brown on other side. Drain on paper towels. Salt to taste.
