1 beef tenderloin or rib roast trimmed of all fat (5-8 lbs.) 1/2 cup fresh chopped garlic (can be found in a jar with fresh vegetables in supermarket) MARINADE 1/2 liter sweet red wine 1/4 cup Worchestershire Sauce 1/4 cup soy sauce 1 tsp. onion powder, or 1/4 cup dried minced onion Combine all ingredients except meat and garlic. Pour marinade mixture into glass baking dish (2 inches deep) and cover with plastic wrap. Sprinkle meat with salt and black pepper. Spread garlic on one side of meat and place garlic side up in marinade. (Meat will be approximately 1/2 covered.) Let set for 45 minutes to 1 hour, then turn meat over and spread garlic on exposed surface. Let set again for 45 minutes to 1 hour. Bake in 325°F oven to desired doneness. Marinade can be brought to boil on top of stove and used as sauce when meat is served. |
