Barbara's Sugar Free Seasoned Croutons

8 cups cubed (1/2-3/4 inch cubes) and dried low carb bread (I used Nature's Own Fiber and wheat 7 grams carb/slice bread)
2 sticks butter, melted (1/2 pound)
1/2 cup olive oil
2 Tbsp. garlic powder
1 Tbsp. chopped, dry parsley
2 Tbsp. grated parmesan cheese

Cube bread and spread out in a single layer to dry for 3-4 hours. Combine all ingredients except bread cubes. Pour mixture over bread cubes and stir until cubes are well covered with mixture (I put them in a deep bowl to do this). Spread out on large baking sheet and bake at 250F for 1 hour, stirring well half-way through. Cool and store at room temperature for 2 weeks or freezer for 1 month.
