Barbara's Low Carb Pork Barbeque

1/4 cup onions, diced
3 tbsp olive oil
2-2 1/2 cups LC ketchup
1/2 cup cider vinegar
2 tsp dry mustard ECC
3 Tbsp Worchestershire sauce
1/4 tsp black pepper or to taste
1/2 cup brown sugar substitute

Saute onions in olive oil until translucent but not browned. Add all other ingredients and mix well. Add 6-8 cups cooked shredded pork. Simmer for 30 minutes to meld flavors.

Makes about 3 cups (48 tbsp) sauce. Carb count will depend on ketchup used.
