1 cup flour substitute (my favorite is Rao's "cake flour") 1/2 cup butter, melted 1/4 cup powdered maltitol 2 eggs 3 tbsp lemon juice 1 tsp lemon rind 1 cup artificial sweetener (I used half Diabetisweet and half Splenda) 1/2 tsp baking powder 1 tbsp flour substitute (my favorite is Rao's "cake flour") Mix 1 cup flour substitute, butter, and powdered maltitol. Mix and pour into an 8x10 square pan. Bake until lightly browned. Beat eggs, lemon juice and rind, granulated sugar, baking powder, and 1 tbsp flour substitute. Pour over baked crust. Bake 25-30 minutes and sprinkle with powdered maltitol. Cool. Cut into squares. |
