Shortbread

1-1/4 cups flour
1/2 cup sugar
1/2 lb. butter
1 tbsp. cornstarch
1 tsp. salt
1 tsp. vanilla

Soften butter and beat together with sugar until fluffy. Add other ingredients. Roll into walnut-sized balls and flatten with cookie press or bottom of drinking glass (be sure to flour glass and press to avoid sticking). Roll in sugar, if desired. Bake at 275°F for 30 minutes or until lightly browned. Cool on racks. Store in airtight containers. Note: Chilling dough before forming into balls is helpful.
