Moravian Spice Cookies

4 cups sifted all-purpose flour
3/4 tsp. baking soda
1/2 tsp. salt
1 tsp. ginger
1 tsp. nutmeg
1 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. ground cloves
1/2 cup light brown sugar
1/2 cup softened butter or margarine
1 cup light molasses

Sift together flour, baking soda, salt, and spices and set aside. In a large bowl, mix brown sugar, butter, and molasses at medium speed of mixer until well blended. With wooden spoon, stir in flour mixture then mix with hands until well combined. Form dough into a ball and chill overnight. Next day, divide dough into 4 parts and refrigerate until ready to roll out. Roll out dough on lightly floured surface about 1/8 inch thick. Bake at 375°F for 6-8 minutes. Cool on wire racks.
