1/2 pound butter 1-2/3 cups sugar 5 eggs 2 cups cake flour 1/2 tsp. salt 1 tsp vanilla, or 1/2 tsp. mace Preheat oven to 325°F. Butter and lightly four a 9x5 inch loaf pan. Cream butter, slowly add sugar, and beat until light. Add eggs, one at a time, beating each in well. Stir in flour, salt, and vanilla or mace and combine well. Spoon into pan and bake for 1-1/4 to 1-1/2 hours, or until a toothpick comes out clean. Cool in the pan for 5 minutes before turning out onto a wire rack. Serve very thin slices. Note: This recipe doubles for a tube pan very well. |
