Banana Bread

1-1/4 cup flour
1 cup sugar
1/2 tsp. salt
1 tbsp. baking soda
1/2 cup solid vegetable shortening
3 small ripe bananas, mashed
2 eggs
Mix dry ingredients together. Cream shortening. Add bananas and eggs and mix well. Fold dry ingredients into liquid mixture quickly; do not overmix. Spoon into greased and floured loaf pan. Set pan down hard several times to remove air bubbles. Bake at 350°F for 40-50 minutes. Let stand in pan 5 minutes. Turn out onto wire rack. Let cool before slicing.
