Sausage-Cheese Balls

1 lb. grated sharp cheddar cheese
1 lb. uncooked pork sausage
biscuit mix

Allow sausage and cheese to warm slightly to make mixing easier. Add enough biscuit mix to make mixture stiff (almost dry; grease from sausage during cooking will add moisture). Mix well and chill. Again, allow mixture to warm slightly, and form into walnut-sized balls. Place on cookie sheet and bake at 350° for 20-30 minutes, or until browned. Serve hot. Refrigerate leftovers. Note: Sausage-Cheese balls may be frozen either before or after baking for longer storage time.
